Ingredients:

For Apple pie:

1000 g of apples (it will be almost eight apples of medium size)

250 g of all-purpose flour

125 g of butter (diced)

4 g of salt

50 g or one large egg

20 g of water

For the vanilla custard:

500 g of whole milk

125 g of sugar

50 g or one large egg 

60 g or three large egg yolks 

 5 g of vanilla beans (you can also use vanilla paste)

 25 g of flour

 25 g of corn starch

Directions:

Make the crust for the pie:

To make the crust, take a fluted tart pan, grease it with oil, and put it aside. After that, take a bowl and make a mixture of flour, salt, and diced butter. Keep mixing the items until it becomes well combined. After that, add egg and water to the prepared mixture and combine them. Now, chill the mixture until it becomes hardened. After freezing the dough, roll it out into a thick sheet of 3mm. Ensure that the crust is almost 4cm larger than the tart pan. Lay the crust into the greased pan and give it a shape of a tart shell. Do not forget to prick the pie crust. At last, place the tart pan in the freezer.

Make the vanilla custard:

Take a baking tray and place it in the freezer. Take a pan and add milk, vanilla seeds, and 20 g of sugar. Turn on the heat and bring the liquid mixture to a boil. After boiling, turn off the heat on your stove and let the mixture infuse for at least 20 minutes. On the side, take a pastry bowl and mix the eggs and egg. Add the remaining sugar and remaining ingredients to the bowl. After that, you can turn on the heat for the milk mixture and add the dry mixture to it while whisking constantly. Now, blend the prepared vanilla custard to make it smooth.

After that, take out the baking tray from the freezer. Line the tray with plastic wrap and transfer the hot custard to it. Now cover the tray and let it cool down at room temperature.   

Prepare the apples:

Wash the apples, and cut them in halves. Now, slice the apples into a thin square. 

Assemble: 

Take out the frozen tart pan from the freezer. Let the frozen crust sit at room temperature for almost 15 minutes. Take out the custard from the freezer. You can use a whisker to smooth out the custard. Now, pour the custard over the frozen pie crust. Take the apple slices, and put them over the apple pie crust and vanilla custard. Fill the pie crust with thin apple slices. After covering the apple pie and vanilla custard mixture with apple slices, top them with chunks of butter. 

Baking: 

Preheat the oven to 375°F. Dust some powdered vanilla sugar over the prepared pie and bake it at 350°F for about 55 minutes. Remove the pan from the oven and let it sit at room temperature for 10 to 15 minutes. Top it with whipped cream, and your vanilla custard apple pie is ready.
